Type: Bonarda stop DOC
Production zone: the town of Oltrepò Pavese < br/>Grapes: Croatina 100%
Alcohol level: 12.5% ABV
Vinification: the grapes is done on cassette at the end of September. It performs a soft pressing, the must is fermented in stainless steel tanks, with automatic pump-over, where does a maceration for 12/26/14 days at a temperature of 28° c. The malolactic fermentation took place in barriques where it is aged for about 3 months < br />ORGANOLEPTIC CHARACTERISTICS
Colour: deep ruby red.

Nose: Fine and intense with notes of cherry and almond.

Taste: balanced and full bodied.

Serving temperature: 18°-20° c.

Food pairing: meats, pasta dishes with meat sauce, braised dishes and stews.
